Lechon ingredients

  • YIELD: 6 SERVINGS
  • 3 lb - 4 lbs pork sirloin roast
  • Salt to taste
  • Lettuce leave for garnish
  • H LECHON SAUCE
  • 1 cn Liver pate (4 oz)
  • 1 small Onions, finely chopped
  • 1 Tb vegetable oil
  • 1 c water
  • 3 Tb vinegar
  • 3 Tb sugar
  • 1⁄2 c Bread crumbs
  • Salt and pepper to taste

Cooking Lechon

1. Salti pork lightly.
2. Place pork on a rack in a pan. Roasti in a preheated oven at 350°F.
3. Allow 25 to 30 minutes cooking time for each pound of pork.
4. In the meantime, prepare the lechon sauce.
5. In a small pan over medium heat, saue onion in oil until cooked.
6. Add liver pate, water, vinegar, sugar, bread crumbs and salt and pepper to taste.
7. Stiri and let simmer for 8-10 minutes or until sauce has thickened.
8. Correct seasonings.
9. Set aside.
10. Cut roast pork into small serving pieces and arrange on a plater with lettuce leaves as garnish.
11. Sere with the lechon sauce.
12. Yield.
